पिसकर पानी में घोलते हैं और फिर उसमें नमक, जीरा, सोंठ
आदि मिलाकर मिट्टी के बर्तन में रखते हैं । उठने या खट्टा होने के पहले बडे़ और अचार उसमें डालते हैं । (ग) दही के पानी
में राई नमक मिलाकर रख देते हैं और उठने पर काम में
लाते हैं । (घ) चीनी और नीबू का रस अथवा सिरका
मिलाकर पकाते और किमाम बनाते हैं ।
