ग्लायसेमिक इंडेक्स
वेगवेगळ्या पदार्थांमुळे रक्तातील ग्लुकोजच्या पातळीवर परिणाम वेगवेगळे असू शकतात. ग्लिसमिक इंडेक्स किंवा ग्लायसेमिक इंडेक्स या फरक मोजण्याचे प्रयत्न करतो. अन्नपदार्थांच्या उपलब्ध कर्बोदकेतील प्रत्येक ग्राम व्यक्तीच्या रक्तातील ग्लुकोजच्या पातळीला शुद्ध ग्लुकोजच्या वापराशी संबंधित असलेल्या व्यक्तीच्या रक्तातील ग्लुकोजच्या पातळीला किती प्रमाणात वाढते याचे आकलन करून असे होते, ज्याचे ग्लायसेमिक निर्देशांक 100 आहे. कारण ग्लुकोज प्रतिसादात मोठ्या प्रमाणात वाढ होते आहे. एखाद्या विशिष्ट अन्नपदार्थ खाल्ल्यानंतर रक्तातील ग्लुकोजच्या पातळीचे वाढते प्रमाण किती खालच्या पातळीवर असते हे जरी अन्नसामग्रीने विशेषतः त्या प्रतिसादांमध्ये जास्त सुरवातीच्या चढाईसाठी तयार करते, तरीही ही द्रव्ये अन्न वापरून चरबीच्या प्रमाणात प्रभावित होऊ शकतात, तसेच इतर कारणांद्वारे ग्लायसेमिक इंडेक्स सामान्यतः अन्नाच्या प्रमाण आणि कार्बोहायड्रेटची मात्रा जे प्रत्यक्षात सेवन केले जाते त्या अन्नाच्या बाबतीत लागू केले जाते. वास्तविक सेवारत कार्बोहायड्रेट सामग्रीद्वारे संबंधित पदार्थ, ग्लायसेमिक लोड, हे पदार्थाचे ग्लायसेमिक इंडेक्स गुणाकार करून याचे कारण आहे. टरबूज एक उच्च ग्लायसेमिक इंडेक्स आहे, परंतु सामान्यत: वापरल्या जाणाऱ्या प्रमाणासाठी कमी ग्लिसमिक लोड.
