पॅक्टिन हे स्ट्रक्चरल हेटरोपॉलीसेकेराइड आहे जे प्राथमीक वनस्पतींच्या प्राथमिक सेलच्या भिंतींमध्ये समाविष्ट केले आहे. हे हेनरी ब्रॅकनॉट यांनी प्रथम 1825 मध्ये पृथक आणि वर्णन केले होते. मुख्यत्वे लिंबूवर्गीय फळांपासून वेगळे करून पांढर्या भागातून पांढर्या रंगाचे उत्पादन केले जाते आणि हे विशेषतः जाम आणि जेली यांच्यामध्ये गेलिंग एजंट म्हणून वापरले जाते. हे फ्रिज, औषधे, मिठाईमध्ये फळांच्या रस आणि दुधाच्या स्टेबिलिझरच्या रूपात वापरले जाते आणि आहारातील फायबर स्त्रोत म्हणून देखील वापरले जाते.
