टकीला
टकीला हा निळसर एव्हलेव्ह वनस्पतीपासून बनविलेले डिस्टिल्ड पेयाचे एक विशिष्ट नाव आहे, प्रामुख्याने ग्वाडालजाराच्या 65 किमी उत्तर पश्चिमेला आणि उत्तर वेस्टर्न मैक्सिकन राज्याच्या जलिस्को शहराच्या परिसरात असलेल्या टकीला शहराच्या आसपासच्या परिसरात. जरी पेला क्वालिला एक प्रकारचा मेकॅस्क आहे तरी, आधुनिक निळा जांभळे वनस्पती आणि त्याच्या प्रादेशिक विशिष्टतेच्या उपयोगात आधुनिक पद्धतीने त्यांचे उत्पादन पद्धतीमध्ये थोडीशी फरक आहे. आसपासच्या प्रदेशामध्ये लाल ज्वालामुखीचा माती विशेषतः ब्लू ऍव्हवेटच्या वाढीस उपयुक्त ठरते आणि दर वर्षी 300 दशलक्षांहून अधिक वनस्पतींची कापणी होते. प्रदेशावर अवलंबून असलेल्या ऍव्हवेक टकाला वेगळ्या प्रमाणात वाढते. हाईलँड्स क्षेत्रामध्ये वाढलेल्या ब्लू ऍगवे सुवर्ण आणि चव या आकारात मोठ्या प्रमाणात असतात. दुसरीकडे, निचरा जमिनीत शेळ्या Agaves, अधिक ज्यात वनऔषधी लावल्या आहेत सुगंध आणि चव आहेत मेक्सिकन कायद्यात असे म्हटले आहे की टकीला फक्त जॅलिस्को राज्यातच मर्यादित आणि ग्वायाजुआटो, मिचोआकॅन, नैयरीट आणि तामाउलिपास राज्यांमधील मर्यादित क्षेत्र तयार करता येते.
