Pektin adalah heteropolysakarida struktur yang terkandung dalam dinding sel primer tumbuhan daratan. Ia pertama kali diasingkan dan diterangkan pada tahun 1825 oleh Henri Braconnot. Ia dihasilkan secara komersil sebagai serbuk putih kepada serbuk coklat muda, terutamanya yang diekstrak daripada buah sitrus, dan digunakan dalam makanan sebagai agen gelling, terutama dalam jem dan jeli.
