Glikogen tworzy rezerwę energii, która może być szybko zmobilizowana, aby zaspokoić nagłą potrzebę glukozy, ale która jest mniej zwarta niż rezerwy energii triglicerydów. W komórkach wątroby glikogen może tworzyć do 8% świeżego ciężaru tuż po posiłku. Tylko glikogen przechowywany w wątrobie może być dostępny dla innych narządów.
