We wszystkich zwierząt dwurzędowych, mezoderm jest jedną z trzech podstawowych warstw zarodkowych we wczesnym zarodku. Pozostałe dwie warstwy to ektoderma i endoderma, z mezodermą jako środkową warstwą między nimi. Mesoderm tworzy mezenchyme, mesothelium, nie-nabłonkowe krwinki i koelomocyty. Beta-katenina działa jako kofaktor, który zmienia aktywność czynnika transkrypcyjnego tcf-3 z represji do aktywacji, co inicjuje syntezę produktów genowych krytycznych dla zróżnicowania mezodermy i gastrulacji. Ponadto, mezoderm ma zdolność do indukowania wzrostu innych struktur, takich jak płyta nerwowa, prekursor układu nerwowego.
