Smak, postrzeganie smakowe lub podżarzenie jest wrażeniem sensorycznym żywności lub innych substancji na języku i jest jednym z pięciu tradycyjnych zmysłów. Smak jest sensacją, gdy substancja w ustach reaguje chemicznie z komórkami receptora smaku znajdującymi się na kubkach smakowych. Smak wraz z zapachem i pobudzeniem nerwu trójdzielnego określa smaki żywności lub innych substancji. Ludzie mają receptory smaku na pąki smakowe i inne obszary, w tym górną powierzchnię języka i naskórek. Język jest pokryty tysiącami małych guzek zwanych papillami, które są łatwo widoczne gołym okiem. W każdej brodawce są setki kubków smakowych. Wyjątkiem jest brodawki płócienne, które nie zawierają kubków smakowych. Istnieje od 2000 do 5000 kubków smakowych, które znajdują się z tyłu i z przodu języka. Inne są zlokalizowane na dachu, bokach, plecach i gardle. Każdy pąk smakowy zawiera od 50 do 100 komórek receptora smaku. Poczucie smaku można podzielić na pięć podstawowych smaków: słodkość, kwaśność, słałość, gorycz i umami.
