Trójglicerydem jest ester pochodzący z gliceryny i trzech kwasów tłuszczowych. Jako lipid we krwi pomaga umożliwić dwukierunkową przenikanie tłuszczu tłuszczowego i glukozy we krwi z wątroby. Istnieje wiele triglicerydów: w zależności od źródła oleju niektóre są bardzo nienasycone, a niektóre mniej. Nasycone związki są "nasycone" wodorem - wszystkie dostępne miejsca, w których atomy wodoru mogą być związane z atomami węgla, są zajęte. Nienasycone związki mają podwójne wiązania pomiędzy atomami węgla, zmniejszając liczbę miejsc, w których atomy wodoru mogą wiązać się z atomami węgla. Nasycone związki mają pojedyncze wiązania między atomami węgla, a drugie wiązanie jest związane z atomami wodoru. Nienasycone tłuszcze mają niższy punkt topnienia i są bardziej podatne na ciecze w temperaturze pokojowej. Tłuszcze nasycone mają wyższy punkt topnienia i są bardziej podatne na stałą w temperaturze pokojowej. Trójglicerydy są głównymi składnikami tłuszczu roślinnego i tłuszczów zwierzęcych. Trójglicerydy są głównym składnikiem olejów skóry ludzkiej.
