Licopeno
O licopeno é um pigmento de caroteno e carotenóide vermelho brilhante e fitoquímico encontrado em tomates e outras frutas e vegetais vermelhos, como cenouras vermelhas, melancias, gac e papaias. Embora o licopeno seja quimicamente um caroteno, não tem atividade de vitamina A. Alimentos que não são vermelhos também podem conter licopeno. Em plantas, algas e outros organismos fotossintéticos, o licopeno é um intermediário importante na biossíntese de muitos carotenóides, incluindo o betacaroteno, responsável pela pigmentação amarela, laranja ou vermelha, fotossíntese e foto-proteção. Como todos os carotenóides, o licopeno é um hidrocarboneto poliinsaturado. Estruturalmente, é uma tetraterpena montada a partir de oito unidades de isopreno, composta inteiramente de carbono e hidrogênio, e é insolúvel em água. As duplas ligações conjugadas de Lycopene conferem a sua cor vermelha profunda e são responsáveis pela sua atividade antioxidante. Devido à sua forte cor e não toxicidade, o licopeno é uma coloração alimentar útil e é aprovado para uso nos EUA, Austrália e Nova Zelândia e na UE. O licopeno não é um nutriente essencial para os seres humanos, mas é comumente encontrado na dieta, principalmente a partir de pratos preparados a partir de tomates.
