Espinafre é uma planta florestal comestível na família de Amaranthaceae. É nativo do centro e sudoeste da Ásia. É uma planta anual, que cresce até uma altura de até 30 cm. Espinafre pode sobreviver durante o inverno em regiões temperadas. As folhas são alternadas, simples, ovadas a triangulares, de tamanho muito variável de cerca de 2-30 cm de comprimento e 1-15 cm de largura, com folhas maiores na base da planta e folhas pequenas mais altas no tronco florido. As flores são discretas, amarelo-verde, 3-4 mm de diâmetro, amadurecendo em um conjunto de frutas pequeno, duro, seco, grumoso 5-10 mm, contendo várias sementes. O espinafre comum, Spinacia oleracea, foi considerado há muito tempo na família Chenopodiaceae, mas em 2003, a família Chenopodiaceae foi combinada com a família Amaranthaceae sob o nome de família 'Amaranthaceae' na ordem Caryophyllales. Dentro da família Amaranthaceae, Amaranthoideae e Chenopodioideae são agora subfamílias, para amaranto e chenópodes, respectivamente.
