Xanthan gum
A goma xantana é um polissacarídeo secretado pela bactéria Xanthomonas campestris, usado como aditivo alimentar e modificador de reologia, comumente usado como agente espessante alimentar e estabilizador. É composto de unidades repetidas de pentasacarídeos, compreendendo glicose, manose e ácido glucurônico na razão molar 2,0: 2,0: 1,0. É produzido pela fermentação de glicose, sacarose ou lactose. Após um período de fermentação, o polissacarídeo é precipitado a partir de um meio de crescimento com álcool isopropílico, seco e moído em pó fino. Mais tarde, é adicionado a um meio líquido para formar a goma.
