Tortul de la Genoa este un tort de fructe alcătuit din sultanuri, coacăze sau stafide, cireșe de glazură, migdale și coaja sau esența portocală confiate, fierte într-un amestec de făină, ouă, unt și zahăr. Deși denumirea de tort genoa este folosită în principal în Regatul Unit, este o variantă a tortului de pandolă care a apărut în secolul al XVI-lea în Genova ca un tort de Crăciun. Spre deosebire de genoa, Pandolcea tradițională include nuci de pin ca ingredient principal și folosește drojdie ca agent de creștere, care necesită mai multe ore să se ridice, cum ar fi pâinea. Această formă originală este acum cunoscută sub numele de Pandolce Alto, în timp ce o variantă mai simplă care folosește praf de copt este cunoscută sub denumirea de Pandolce basso și este, în esență, aceeași ca și tortul de genoa vândut în Marea Britanie, cu o textura umedă dar friabilă. Genoa cake is a fruit cake consisting of sultanas, currants or raisins, glacé cherries, almonds, and candied orange peel or essence, cooked in a batter of flour, eggs, butter and sugar. Although the name genoa cake is mainly used in the UK, it is a variant of the Pandolce cake which originated in 16th century Genoa as a Christmas cake. Unlike genoa, traditional Pandolce includes pine nuts as a major ingredient and uses yeast as its raising agent, which requires several hours to rise, like bread. This original form is now known as Pandolce Alto, whilst a simpler variant which uses baking powder is known as Pandolce basso and is essentially the same as the genoa cake sold in the UK, with a moist but crumbly texture. The term Genoa cake is also sometimes used to refer to Génoise cake which is a light sponge cake without fruit.
