Sarcina glicemică a alimentelor este un număr care estimează cât de mult va crește nivelul de glucoză al unei persoane după ce a mâncat. O unitate de încărcare glicemică aproximează efectul consumării unui gram de glucoză. Încărcarea glicemică reprezintă cât de mult carbohidrați este în alimente și cât de mult fiecare gram de carbohidrat din alimente ridică nivelul de glucoză din sânge. Încărcarea glicemică se bazează pe indicele glicemic și este definită ca fracțiunea de carbohidrat disponibil în momentele de hrană ale GI-ului alimentar. Valoarea glicemică determină impactul consumului de carbohidrați utilizând indicele glicemic ținând cont de cantitatea de carbohidrat consumată. GL este o măsură măsurată cu GI a conținutului de carbohidrați. De exemplu, pepene verde are un GI ridicat, dar o servire tipică de pepene verde nu conține prea mult carbohidrați, deci sarcina glicemică de a mânca este scăzută.
