Ionona
Iononii sunt o serie de substanțe chimice strâns legate, care fac parte dintr-un grup de compuși cunoscuți sub numele de cetone de trandafir, care include și damasconi și damascenone. Ionii sunt compuși de aromă găsiți într-o varietate de uleiuri esențiale, inclusiv ulei de trandafir. β-Ionona contribuie semnificativ la aroma trandafirilor, în ciuda concentrației sale relativ scăzute și este o substanță chimică importantă în parfumerie. Iononele sunt derivate din degradarea carotenoidelor. Combinația de α-iononă și β-iononă este caracteristică mirosului de violete și este utilizată împreună cu alte componente în parfumerie și aromă pentru a le recrea parfumul. Carotenele a-caroten, β-caroten, y-caroten și xantofil și β-criptoxantină pot fi metabolizate în total la β-iononă și astfel au activitate de vitamina A deoarece pot fi transformate prin animale care mănâncă plante în retinol și retinală. Carotenoizii care nu conțin restul de ioni β nu pot fi transformați în retinol și, prin urmare, nu au activitate de vitamina A.
