La toate animalele bilateriene, mezodermul este unul dintre cele trei straturi germinale primare din embrionul foarte timpuriu. Celelalte două straturi sunt ectodermul și endodermul, cu mezodermul ca stratul intermediar între ele. Mesodermul formează mezenchim, mezoteliu, celule sanguine neepiteliale și coelomocite. Mesothelium linii coeloms; formează mușchii într-un proces cunoscut sub numele de miogeneză, septa și mesenterie; și face parte din gonade. Mesodermul diferențiază de restul embrionului prin semnalizare intercelulară, după care mesodermul este polarizat de un centru de organizare. Poziția centrului de organizare este, la rândul său, determinată de regiunile în care beta-catenin este protejat de degradare de către GSK-3. Beta-cateninul acționează ca un cofactor care modifică activitatea factorului de transcripție tcf-3 de la reprimare la activare, care inițiază sinteza produselor genetice critice pentru diferențierea și gastrularea mesodermelor. În plus, mesodermul are capacitatea de a induce creșterea altor structuri, cum ar fi placa neurală, precursorul sistemului nervos.
