Acidul piruvic este un acid organic, are un acid carboxilic și o grupare funcțională cetonă și este cel mai simplu dintre acizii alfa-ceto. Anionul carboxilat al acidului piruvic, baza conjugată Brønsted-Lowry, CH3COCOO- este cunoscută sub denumirea de piruvat și reprezintă o intersecție cheie în mai multe căi metabolice.
