Trygliceride
O trigliceridă este un ester derivat din glicerol și trei acizi grași. Fiind o lipidă din sânge, aceasta ajută la transferarea bidirecțională a grăsimilor adipoase și a glicemiei din ficat. Există multe trigliceride: în funcție de sursa de ulei, unele sunt foarte nesaturate, altele mai puțin. Compușii saturați sunt "saturați" cu hidrogen - toate locurile disponibile unde atomii de hidrogen pot fi legați la atomii de carbon sunt ocupați. Compușii nesaturați au legături duble între atomii de carbon, reducând numărul de locuri unde atomii de hidrogen se pot lega de atomii de carbon. Compușii saturați au legături simple între atomii de carbon, iar cealaltă legătură este legată de atomii de hidrogen. Grasimile nesaturate au un punct de topire mai scăzut și sunt mai susceptibile de a fi lichide la temperatura camerei. Trigliceridele sunt constituenții principali ai uleiurilor vegetale și grăsimilor animale. Trigliceridele reprezintă o componentă majoră a uleiurilor pentru pielea umană.
