Kafein ; matein ve guaranin olarak da bilinir. Bir alkaloid olan kafein doğal olarak kahvede, çayda, yerba mate'de, guarana'da ve, az miktarda, kakao içinde bulunur. Kafein, merkezi sinir sistemine etki ederek, beyne giden ve beyinden gelen mesajları hızlandırır ve stimülan etkisi yapar. Emilimi büyük oranda ince bağırsaktandır. Kafein birçok bitkide değişik miktarlarda bulunmaktadır. Fasulyelerde, yapraklarda ve meyvelerde 60 çeşit bitkide bulunur. Bilinen kuru çay, %10 luk Pb ya da Ca2CO3 ile birlikte kaynatıldıktan sonra ayırma hunisinde kloroform ile ekstrakte edilir kalan alt faz alınıp içindeki kloroform uçurulur ve kalan sıvı süblimasyon yöntemi ile saflaştırılarak kafein elde edilebilir.
