Agar veya agar-agar, yosunlardan elde edilen jelatinimsi bir maddedir ve Japonya'daki Minoya Tarozaemon tarafından 1650'lerin sonunda veya 1660'lı yılların başında keşfedilmiştir; burada adı Kanten'dir. Agar, bazı yosun türlerinin hücre duvarlarında destekleyici yapı oluşturan ve kaynatılmak üzere serbest bırakılan polisakkarit agarozdan türemiştir.
