Askorbik asit
Askorbik asit, antioksidan özelliklere sahip, doğal olarak oluşan bir organik bileşiktir. Beyaz bir katıdır, ancak saf olmayan örnekler sarımtırak görünebilir. Hafif asitli çözeltiler vermek için suda iyi çözünür. Askorbik asit, C vitamininin bir şeklidir. Başlangıçta L-hekzüronik asit olarak biliniyordu, ancak hayvanlarda C vitamini aktivitesi bulunduğu tespit edildiğinde, L-hekzilonik asidin yeniden adlandırılması önerildi. L-hekzüronik asidin yeni adı a- ve skorbutlardan türetilir, hastalık C vitamininin eksikliğinden kaynaklanır. Glikozdan türetildiğinden birçok hayvan onu üretir, ancak insanlar beslenmesinin bir parçası olarak isterler . Askorbik asit üretme kabiliyeti bulunmayan diğer omurgalılar, diğer primatları, kobayları, teleost balıklarını, yarasaları ve bazı kuşları içerir; bunların hepsi besleyici bir mikro besleyici madde olarak gereklidir. Doğada görülmeyen bir D-askorbik asit var. Yapay olarak sentezlenebilir. L-askorbik aside özdeş antioksidan özelliklere sahip olmasına karşın vitamin C aktivitesi çok daha düşüktür. Bu gerçek, askorbik asidin antioksidan özelliklerinin etkin vitamin etkinliğinin yalnızca küçük bir parçası olduğunun kanıtı olarak alınmaktadır.
