Higroskopi, bir maddenin çevredeki ortamdan su moleküllerini çekip tutabilmesidir. Bu, emici veya adsorbe edici materyalin, hacim, yapışkanlık veya materyalin diğer moleküler özelliklerinde bir artış ile fiziksel olarak biraz değişmesi ile absorpsiyon veya adsorpsiyon yoluyla elde edilir, çünkü su molekülleri işlem sırasında materyalin molekülleri arasında askıda kalır. Bazı benzer kuvvetler burada işe yarasa da, kılcal çekimden farklıdır, kılcal çekim, camın veya diğer katı maddelerin suyu çektiği, ancak süreç içinde değişmediği bir süreçtir.
