Gastrik asit
Gastrik asit midede oluşan bir sindirim sıvısıdır. 0.1 M kadar yüksek hidroklorik asit, potasyum klorür ve sodyum klorürden oluşur. Asit, proteinlerin sindiriminde, sindirim enzimlerini aktive ederek ve sindirim enzimlerinin amino asitlerin uzun zincirlerini parçalaması için yenilenmiş proteinleri çözerek önemli bir rol oynar. Gastrik asit, mideyi astarlayan hücreler tarafından üretilir ve bunlar gerektiğinde asit üretimini artırmak için geri bildirim sistemlerinde birleştirilir. Midedeki diğer hücreler sıvıyı tamponlamak için çok asidik olmamasını sağlayan bir baz olan bikarbonat üretirler. Bu hücreler aynı zamanda, mide asidinin mideye zarar vermesini önlemek için yapışkan bir fiziksel bariyer oluşturan mukus üretirler. İnce bağırsağın veya duodenumun başındaki hücreler, bundan başka, sindirim sistemine daha da ilerleyen gastrik asidi tamamen nötralize etmek için büyük miktarda bikarbonat üretirler. Gastrik asit mide içindeki parietal hücreler tarafından üretilir. Sekresyonu, karmaşık ve nispeten enerjik olarak pahalı bir süreçtir. Parietal hücreler gastrik asidin midenin lümenine salındığı geniş bir salgı ağı içerir.
