Bilateral hayvanlarda mezoderm, çok erken embriyondaki üç temel germ tabakasından biridir. Diğer iki katman, aralarında orta kat olarak bulunan mezoderm ile birlikte ektoderm ve endodermdir. Mezoderm mezenkim, mezotelyum, non-epitelial kan hücreleri ve coelomositler oluşturur. Mezotelyum hatları coelom olur; kasları miyogenez, septa ve mesenterie olarak bilinen bir süreç içinde oluşturur; ve gonadların bir bölümünü oluşturur. Mezoderm, hücrelerarası sinyal yoluyla embriyonun geri kalanından farklılaşır ve ardından mezoderm, bir organizasyon merkezi tarafından polarize edilir. Organizasyon merkezinin konumu, beta-katenin'in GSK-3 tarafından bozunmaya karşı korunduğu bölgeler tarafından belirlenir. Beta-katenin, transkripsiyon faktörü tcf-3'ün aktivasyonunu baskılanmasından aktive edilmesine değiştiren ve mezoderm diferansiyasyonu ve gastrulasyon için kritik olan gen ürünlerinin sentezini başlatan bir faktör olarak görev yapar.
