Kök sebzeler sebze olarak kullanılan bitki kökleridır. Burada "kök" bir bitkinin herhangi bir yeraltı bölümünü ifade eder. Kök sebzeler genelde karbonhidrat formunda enerji depolamak üzere büyütülen depolama organlarıdır. Şekerler, nişastalar ve diğer karbonhidrat türleri arasındaki konsantrasyon ve denge açısından farklılık gösterirler. Özellikle ekonomik öneme sahip olanlar, nişasta biçiminde yüksek karbonhidrat konsantrasyonuna sahip olanlardır. Nişastalı kök sebzeleri, özellikle tropik bölgelerde, Batı Afrika'nın, Orta Afrika'nın ve Okyanusya'nın tamamında hububat gölgesinde bırakılan önemli besin maddeleridir, burada doğrudan fufu veya poi yapmak için püre haline getirilirler.
