Афлатоксини - природні мікотоксини, які продукуються Aspergillus flavus та Aspergillus parasiticus, види грибів. Назва було створено приблизно в 1960 році після того, як було виявлено, що джерелом хвороби індички X є токсини Aspergillus flavus. Афлатоксини є токсичними і серед найбільш відомих канцерогенних речовин. Після введення в організм афлатоксини можуть бути метаболізуються печінкою до реактивного епоксидного проміжного продукту або гідроксировані, щоб стати менш шкідливим афлатоксином M1.
