黄原胶是由黄单胞菌(Xanthomonas campestris)分泌的多糖,用作食品添加剂和流变改性剂,通常用作食品增稠剂和稳定剂。 它由五糖重复单元组成,包含摩尔比2.0:2.0:1.0的葡萄糖,甘露糖和葡萄糖醛酸。 它是通过葡萄糖,蔗糖或乳糖的发酵产生的。 发酵后,多糖用异丙醇从生长培养基中沉淀出来,干燥,研磨成细粉末。 然后将其加入到液体介质中以形成口香糖。 Xanthan gum is a polysaccharide secreted by the bacterium Xanthomonas campestris, used as a food additive and rheology modifier, commonly used as a food thickening agent and a stabilizer. It is composed of pentasaccharide repeat units, comprising glucose, mannose, and glucuronic acid in the molar ratio 2.0:2.0:1.0. It is produced by the fermentation of glucose, sucrose, or lactose. After a fermentation period, the polysaccharide is precipitated from a growth medium with isopropyl alcohol, dried, and ground into a fine powder. Later, it is added to a liquid medium to form the gum.
