Keratin adalah sejenis protein serat yang kuat dan tidak larut yang membentuk rambut, kuku, kulit, tanduk dan gigi. Asid amino yang bergabung membentuk keratin mempunyai sifat yang unik dan bergantung kepada tahap asid amino, keratin boleh menjadi tidak fleksibel dan keras dalam kes kuku binatang atau lembut dalam kes kulit. Keratin ditemui di lapisan luar kulit manusia dan binatang lain. Sel lapisan kulit luar mengandungi keratin dan menjadikan kulit tahan kuat dan hampir kalis air. Di tempat-tempat di mana kulit terdedah kepada gesekan dan tekanan seperti di tangan dan kaki, jumlah sel yang mengandungi keratin bertambah dan belulang mula terbentuk. Sel yang mengandungi keratin sentiasa tanggal dan digantikan dengan yang baru. Keadaan yang dipanggil kelemumur terjadi disebabkan kulit kepala membuang sel tersebut.
