Doh merupakan adunan tepung yang telah dicampurkan dengan air atau bahan yang bersesuaian, dan ia diuli untuk dibuat roti, pastri, dan sebagainya. Dibuat daripada campuran tepung dengan sedikit jumlah air atau bahan cecair yang lain. Bahan seperti telur, mentega atau marjerin, dan susu sering ditambahkan di dalam adunan. Proses ini merupakan proses pendahuluan atau pelopor untuk membuat makanan seperti roti,biskut, pastri, piza dan sejenis dengannya. Bahan penaik seperti yis boleh digunakan bagi membentuk doh yang gebu atau doh tertapai. Doh yang mempunyai bahan penaik, perlu melalui proses penaikan. Ia boleh dilakukan dengan menutup doh dengan pembalut plastik atau kain di atas mangkuk adunan doh dan diletak di dalam bilik penaikan. Perbezaan doh dengan bater, doh perlu melalui proses pengulian yang menggunakan tangan atau mesin seperti pengadun atau pembancuh tepung. Doh lebih tebal dan boleh digumpal.
