Durum
Hartweizen oder Makkaroni-Weizen ist die einzige tetraploide Spezies von Weizen von kommerzieller Bedeutung, die heute weitgehend angebaut wird. Es wurde durch künstliche Auswahl der domestizierten Emmer-Weizen-Stämme entwickelt, die früher in Mitteleuropa und dem Nahen Osten um 7000 v. Chr. Angebaut wurden, die eine nackte, frei-dreschende Form entwickelten. Durum in Latein bedeutet "hart", und die Art ist die härteste aller Weizen. Sein hoher Proteingehalt, sowie seine Stärke, machen Durum gut für besondere Anwendungen, die bekanntesten Pasta, die in Italien ausschließlich aus Hartweizen besteht. Durum Weizen wird ausgiebig in Brot verwendet. Allerdings ist es ungewöhnlich, dass trotz des sehr hohen Proteingehalts es in einem wünschenswerten Gluten, das benötigt wird, um ein klebriges Gewebe zu bilden, das für das Brot erforderlich ist, gering ist. Als Ergebnis, obwohl 100 Prozent Hartweizen Brote gibt, wie Pagnotte di Enna oder "Rimacinato" Brot aus Sizilien, sowie andere, in den meisten Fällen Brot Teige enthalten nur einen Teil von Hartweizen und sind im Wesentlichen mit kommerziellen Weiß ergänzt Mehle, oft diejenigen, die in Gluten notwendig sind, um den armen Glutenbeitrag von Hartweizen auszugleichen.
