Kefir ist ein sprudelndes, dunkles, leicht gegorenes, fermentiertes Milchprodukt, das mit Hilfe von Milchsäure- und Alkoholfermentation hergestellt wird, die zu kommerziellen Zwecken in europäischen und amerikanischen Ländern, insbesondere in der Kaukasusregion seit der Antike, hergestellt wird. Kefir ist in weißlich-brauner, blumenkohlartiger Form und besteht normalerweise aus Erbsen- oder haselnussgroßen Körnchen. Kefir auf dem Boden; Saccharomyces sp., Lactococcus sp., Lactobacillus spp., Leuconostoc spp. Ihre Aktivität führt zu Milchsäure, Ethylalkohol und Kohlendioxid. Einige der im Kefirkorn gefundenen Mikroorganismen spalten den Milchzucker auf und bilden Milchsäure, und die Milch gerinnt. Einige der Mikroorganismen bringen Kohlendioxid und Ethylalkohol ins Wasser. Eine Gärung, die zu Kefir, einem leicht sauren, schaumigen, alkoholischen und joghurtartigen Milchgetränk führt, tritt auf. Kühe, Schafe, Ziegen, Büffelmilch können mit oder ohne Öl verwendet werden. Der Kefir, der im alten Zentralasien weit verbreitet ist, findet sich heute vor allem im Kaukasus.

Kefir, çok eski yıllardan beri özellikle Kafkasya bölgesinde yapılan, bugün ise Avrupa ve Amerika ülkelerinde ticari amaçla üretilen süt asidi ve alkol fermantasyonu yardımıyla yapılan köpüklü, koyu kıvamlı, hafif ekşimsi fermente bir süt ürünüdür. Kefir, beyazımtrak renkte, karnabaharı andırır biçimde ve genellikle bezelye veya fındık büyüklüğünde tanelerden oluşmuştur. Kefir tanesinde; Torula mayaları, Saccharomyces sp., Lactococcus spp., Lactobacillus spp.,Leuconostoc spp gibi mikroorganizmalar bulunur. Bunların faaliyeti sonucu süt asidi, etil alkol ve karbondioksit meydana gelir. Kefir tanesi içerisinde bulunan mikroorganizmalardan bazıları süt şekerini parçalayarak süt asidi oluştururlar ve süt pıhtılaşır. Mikroorganizmalardan bazıları ise karbondioksit ve etil alkol meydana getirirler. Fermantasyon sonucu kefir adı verilen hafif ekşimsi, köpüklü, alkollü ve yoğurt kıvamında bir süt içkisi ortaya çıkar. Kefir yapımında inek, koyun, keçi, manda sütleri yağlı veya yağsız olsun kullanılabilir. Eski Orta Asya'da çok kullanılan kefire, günümüzde bilhassa Kafkasya'da rastlanmaktadır.
