Hydrophilicity means water-loving, which means that a substance interacts strongly with water. The opposite of hydrophilicity is hydrophobicity. Hydrophilic substances are often water-soluble, but there are also hydrophilic substances which are not water-soluble, e.g. Hydrogels or colestipol hydrochloride. For this reason, hydrophilicity is not equivalent to water solubility. It refers only to the interaction with water and neither to the solubility nor to the ability to attract and bind water. A substance which can do this is called hygroscopic. Hydrophilic substances are often lipophobic at the same time, so they dissolve badly in fats or oils. Substances which are hydrophilic and lipophilic are called amphiphilic; For example, soaps. Amphiphilia is a special property of a molecule that carries hydrophobic and hydrophilic groups. Surfaces may also be hydrophilic. These are always covered by a mostly invisible water film. Most metals are hydrophilic, as are glass surfaces. Hydrophilic surfaces have water contact angles close to 0 °.

Aus diesem Grund ist hydrophil nicht mit wasserlöslich gleichzusetzen. Es bezieht sich nur auf die Wechselwirkung mit Wasser und weder auf die Löslichkeit noch auf die Fähigkeit, Wasser anzuziehen und zu binden. Ein Stoff, der dies kann, wird hygroskopisch genannt. Hydrophile Stoffe sind oft gleichzeitig lipophob, lösen sich also schlecht in Fetten oder Ölen. Substanzen, die hydrophil und lipophil sind, bezeichnet man als amphiphil; hierzu zählen zum Beispiel Seifen. Amphiphilie ist eine spezielle Eigenschaft eines Moleküls, das hydrophobe und hydrophile Gruppen trägt. Auch Oberflächen können hydrophil sein. Diese sind immer von einem meistens nicht sichtbaren Wasserfilm bedeckt. Die meisten Metalle sind hydrophil, ebenso Glasoberflächen. Hydrophile Oberflächen haben gegenüber Wasser Kontaktwinkel nahe 0°.
