Risotto is a northern Italian pastry dish made from rice, which is prepared in many variations. A characteristic feature of almost all types of preparations is that round grain rice is thinned with onions and fat and cooked in broth until the dish is smooth and the rice grains are still firm. Depending on the recipe, wine, mushrooms, seafood, meat, vegetables, spices and cheese are added. Rice is known in Italy since the Renaissance and is mainly cultivated in the Po Valley. The best known varieties are Arborio, Vialone, Maratelli and Carnaroli, which are also preferred for risotto. Other round grain rice such as milk rice is basically also suitable, but usually of poorer quality. Long grain rice is, irrespective of the quality, hardly suitable for risotto, since it does not release the starch responsible for the creamy consistency. Risotto is used as a first main course or as an accompaniment to a stew, For example risotto alla milanese to veal shank.

Risotto ist ein norditalienisches Breigericht aus Reis, das in vielen Variationen zubereitet wird. Kennzeichnend für fast alle Zubereitungsarten ist, dass Rundkornreis mit Zwiebeln und Fett angedünstet wird und in Brühe gart, bis das Gericht sämig, die Reiskörner aber noch bissfest sind. Je nach Rezept kommen noch Wein, Pilze, Meeresfrüchte, Fleisch, Gemüse, Gewürze und Käse hinzu. Reis ist seit der Renaissance in Italien bekannt und wird vorwiegend in der Poebene angebaut. Die bekanntesten Sorten sind Arborio, Vialone, Maratelli und Carnaroli, die auch für Risotto zu bevorzugen sind. Anderer Rundkornreis wie Milchreis ist grundsätzlich auch geeignet, aber meist von schlechterer Qualität. Langkornreis ist, unabhängig von der Qualität, für Risotto kaum geeignet, da er bissfest gegart zu wenig der für die sämige Konsistenz verantwortlichen Stärke freisetzt. Risotto wird wie Pasta als erster Hauptgang oder als Beilage zu einem Schmorgericht wie z. B. Risotto alla milanese zu Kalbshaxe serviert.
