Thiaminase

Thiaminases are called enzymes, which occur in several species of bacteria, in some fish and in plants such as bracken fern. The enzymes, when ingested along with the diet, can destroy the vitamin B1 in food and lead to deficiency symptoms and thus to diseases like Beri-Beri. Cooking destroys thiaminase. Thiaminase heißen Enzyme, die in mehreren Bakterienarten, in manchen Fischen und in Pflanzen wie Adlerfarn vorkommen. Die Enzyme, wenn auf Dauer zusammen mit der Nahrung aufgenommen, können das Vitamin B1 in der Nahrung zerstören und zu Mangelerscheinungen und damit zu Krankheiten wie Beri-Beri führen. Kochen zerstört Thiaminase.
