Jambalaya

Jambalaya - Creole, consisting mainly of rice, with onions, garlic, peppers and tomatoes. Its exact composition depends on the origin of the recipe. It comes in many versions. Jambalaya is rather a kind of preparation of rice with additives rather than a specific recipe, since the traditional ingredients differ depending on what was available at the market, on the farm, was harvested from the water or hunted. The basis of the dish is slowly fried on oil or better with pork fat, cut into cubes: onion, sweet pepper and celery. Fish-meat ingredients such as crustaceans, chicken, pork sausage and other smoked meat and sometimes exotic ingredients such as alligator meat, turtle or nutria are added. At the end, rice is added and the whole is poured with water or salt and set aside for free fire. Sliced ​​tabasco sauce is usually an inseparable spice. Jambalaya – potrawa kreolska, składająca się głównie z ryżu, z dodatkiem cebuli, czosnku, papryki i pomidorów. Jej dokładny skład zależy od pochodzenia przepisu. Występuje w bardzo wielu wersjach. Jambalaya jest to raczej rodzaj przygotowywania ryżu z dodatkami, niż konkretny przepis, gdyż tradycyjne składniki różnią się w zależności od tego co było aktualnie dostępne na targu, w gospodarstwie, zostało wyłowione z wody lub też upolowane. Podstawą potrawy są powoli podsmażane na oleju lub lepiej smalcu wieprzowym, pokrojone w kostkę: cebula, słodka papryka i seler naciowy. Następnie dodawane są komponenty mięsno-rybne, takie jak skorupiaki, kurczak, kiełbasa wieprzowa andouille lub inne wędzone mięsa, oraz niekiedy tak egzotyczne składniki jak mięso aligatora, żółwia lub nutrii. Na końcu dodawany jest ryż i całość zalana zostaje wodą lub rosołem i odstawiona na wolny ogień. Ostry sos typu tabasco jest zwykle nieodłączną przyprawą.
