Sake

Sake - A Japanese-made alcoholic beverage made from rice. It contains between fourteen and twenty percent alcohol. In Europe and in most countries outside Japan, sake is a fairly clear drink - a relatively low alcoholic drink produced by the fermentation of rice previously contaminated with Aspergillus oryzae. In Anglo-Saxon countries, it is also called rice wine, although sake production is more like the production of beer. In Poland, it is often mistakenly believed that sake is Japanese vodka. Although sake versions with strong alcohol, sake is not a distillate, but an alcoholic beverage produced without distillation. The production process is similar to brewing with yeast. In Japan, the word sake has a different meaning from the European one, meaning simply any alcoholic beverage, including beer or champagne. In the southern part of Kyushu Island, sake refers to alcohol made from yams, so called. imojōchū. Sake – pochodzący z Japonii napój alkoholowy produkowany z ryżu. Zawiera od czternastu do dwudziestu procent alkoholu. W Europie i w większości krajów poza Japonią sake oznacza trunek dość jednoznaczny – stosunkowo niskoprocentowy napój alkoholowy wytworzony poprzez fermentację ryżu skażonego wcześniej pleśnią Aspergillus oryzae. W krajach anglosaskich bywa też nazywane winem ryżowym, chociaż produkcja sake bardziej przypomina produkcję piwa. W Polsce bardzo często spotykane jest mylne przekonanie, że sake to japońska wódka. Zdarzają się co prawda wersje sake z dodatkiem mocnego alkoholu, jednak samo sake nie jest destylatem, lecz napojem alkoholowym produkowanym bez procesu destylacji. Proces produkcyjny jest podobny do warzenia piwa z wykorzystaniem drożdży. W Japonii słowo sake ma inne znaczenie od przyjętego w językach europejskich, oznacza po prostu każdy napój alkoholowy, łącznie np. z piwem czy szampanem. W południowej części wyspy Kiusiu sake odnosi się do alkoholu wytwarzanego z batatów, tzw. imojōchū.
