Cassoulet

The cassoulet is a gastronomic specialty of French origin in the Languedoc-Roussillon region, especially the cities of Carcassonne, Castelnaudary and Toulouse. It has different versions, but is basically made with dried beans and meat, especially confit d'oie, confit de canard, sausages, sausage, pork, and even partridge or lamb depending on the season of the year or the local variety. Cassoulet de Carcassonne Put the beans in the sauce a few hours before they are then cooked over low heat in a cassoule, or clay casserole, hence the origin of the cassoulet name. Three cities, Castelnaudary, Carcassonne and Toulouse, dispute the origin and the title of best variety of the dish from its origin, probably during the Hundred Years War. But the Languedocian cook Prosper Montagné says that "the cassoulet is the God of Occitan cuisine: in Castelnaudary it is the" Father-God ", the" Son-God "is that of Carcassonne, and the" Holy Spirit "is that of Toulouse. In France, it is very common to find cassoulet already prepared in cans, varying the price and ingredients according to the version.
