In the gastronomy, snap or short-cut certain foods (especially vegetables), placing them in boiling water (naturally, salted or with added vinegar) to "white" them, that is, to preserve their color and texture suitable for proper preparation; from fr. blanchir, germ. blanchieren. BLANȘÁ,blanșez, vb. I. tranz. În gastronomie, a opări sau a fierbe scurt anumite alimente (în special legume), introducându-le în apă clocotindă (natur, sărată sau cu adaos de oțet) pentru a le „albi”, adică pentru a le păstra o culoare și o textură adecvată în vederea preparării propriu-zise; din fr. blanchir, germ. blanchieren.
