La pectina es un heteropolisacárido estructural contenido en las paredes celulares primarias de las plantas terrestres. Fue aislado y descrito en 1825 por Henri Braconnot. Se produce comercialmente como un polvo blanco a marrón claro, principalmente extraído de cítricos, y se utiliza en los alimentos como un agente gelificante, en particular en los mermeladas y jaleas. También se utiliza en rellenos, medicamentos, dulces, como estabilizante en jugos de frutas y bebidas de leche, y como fuente de fibra dietética.
