Prolamina
Las prolaminas son un grupo de proteínas de almacenamiento de plantas que tienen un alto contenido de prolina y se encuentran en las semillas de granos de cereales: trigo, cebada, centeno, maíz, sorgo y como una proteína menor, avenina en avena. Se caracterizan por un alto contenido de glutamina y prolina y generalmente son solubles sólo en soluciones alcohólicas fuertes. Algunas prolaminas, especialmente gliadina, y proteínas similares encontradas en la tribu Triticeae pueden inducir enfermedad celíaca en individuos genéticamente predispuestos.
