Estearina
La estearina / stɪərɨn /, o triestearina, o triestearato de glicerilo es un triglicérido derivado de tres unidades de ácido esteárico. La mayoría de los triglicéridos se derivan de al menos dos y más comúnmente tres ácidos grasos diferentes. Al igual que otros triglicéridos, la estearina puede cristalizar en tres polimorfos. Para la estearina, éstas se funden a 54, 65 y 72,5ºC.
