Acide ascorbique
L'acide ascorbique est un composé organique naturel avec des propriétés antioxydantes. C'est un solide blanc, mais les échantillons impurs peuvent apparaître jaunâtres. Il se dissout bien dans l'eau pour donner des solutions légèrement acides. L'acide ascorbique est une forme de vitamine C. Il s'agissait à l'origine de l'acide L-hexuronique, mais, lorsqu'il a été constaté qu'il avait une activité de vitamine C chez les animaux, on a suggéré de renommer l'acide L-hexuronique. Le nouveau nom de l'acide L-hexuronique est dérivé de a- et scorbutus, la maladie causée par une déficience en vitamine C. Parce qu'il est dérivé du glucose, de nombreux animaux sont capables de le produire, mais les humains en ont besoin dans le cadre de leur alimentation . D'autres vertébrés qui n'ont pas la capacité de produire de l'acide ascorbique comprennent d'autres primates, des cobayes, des poissons télésole, des chauves-souris et de certains oiseaux, ce qui l'exige en tant que micronutriment alimentaire. Il existe un acide D-ascorbique, qui ne se produit pas dans la nature. Il peut être synthétisé artificiellement. Il a des propriétés antioxydantes identiques à l'acide L-ascorbique mais a beaucoup moins d'activité de la vitamine C. Ce fait est considéré comme une preuve que les propriétés antioxydantes de l'acide ascorbique ne sont qu'une petite partie de son activité vitaminique efficace.
