Glycogen
Le glycogène est un polysaccharide multi-ramifié de glucose qui sert de forme de stockage d'énergie chez les animaux et les champignons. La structure du polysaccharide représente la principale forme de stockage du glucose dans le corps. Chez l'homme, le glycogène est fabriqué et stocké principalement dans les cellules du foie et des muscles, et fonctionne comme stockage secondaire à long terme de l'énergie. Le glycogène musculaire est converti en glucose par les cellules musculaires, et le glycogène du foie se convertit en glucose pour l'utiliser dans tout le corps, y compris le système nerveux central. Le glycogène est l'analogue de l'amidon, un polymère de glucose dans les plantes, ayant une structure similaire à l'amylopectine, mais plus ramifié et compact que l'amidon. Le glycogène se retrouve sous la forme de granulés dans le cytosol / cytoplasme dans de nombreux types cellulaires et joue un rôle important dans le cycle du glucose. Le glycogène forme une réserve d'énergie qui peut être rapidement mobilisée pour répondre à un besoin soudain de glucose, mais qui est moins compact que les réserves d'énergie des triglycérides. Dans les cellules du foie, le glycogène peut composer jusqu'à 8% du poids frais peu de temps après un repas. Seul le glycogène stocké dans le foie peut être rendu accessible à d'autres organes.
