La pectine est un hétéropolysaccharide structurel contenu dans les parois cellulaires primaires des plantes terrestres. Il a d'abord été isolé et décrit en 1825 par Henri Braconnot. Il est produit commercialement sous la forme d'une poudre blanche à brun clair, principalement extraite d'agrumes, et utilisée dans les aliments comme gélifiant, en particulier dans les confitures et les gelées. Il est également utilisé dans les garnitures, les médicaments, les bonbons, comme stabilisant dans les jus de fruits et les boissons lactées, et comme source de fibres alimentaires.
