Vitamine A
La vitamine A est un groupe de composés organiques nutritionnels non saturés, qui comprend le rétinol, l'acide rétinoïque, l'acide rétinoïque et plusieurs caroténoïdes de la provitamine A, parmi lesquels le bêta-carotène est le plus important. La vitamine A a plusieurs fonctions: elle est importante pour la croissance et le développement, pour la maintenance du système immunitaire et une bonne vision. La vitamine A est nécessaire par la rétine de l'œil sous la forme de la rétine, qui se combine avec la protéine opsine pour former la rhodopsine, la molécule absorbant la lumière nécessaire à la fois pour la lumière faible et la vision des couleurs. La vitamine A joue également un rôle très différent en tant qu'acide rétinoïque, facteur important de croissance hormonal pour les cellules épithéliales et autres. Dans les aliments d'origine animale, la principale forme de vitamine A est un ester, principalement le palmitate de rétinyle, qui est converti en rétinol dans l'intestin grêle. La forme de rétinol fonctionne comme une forme de stockage de la vitamine, et peut être convertie à partir de sa forme d'aldéhydes visuellement active, la rétine. Toutes les formes de vitamine A ont un cycle bêta-ionone auquel une chaîne isoprénoïde est attachée, appelée groupe rétinyle.
