Parboiling चावल प्रसंस्करण की एक औद्योगिक प्रक्रिया है, जिसमें तथाकथित parboiled चावल का उत्पादन होता है। धान पहले कई चरणों में भिगोया जाता है, फिर गरम वाष्प के साथ इलाज किया जाता है, फिर सूख जाता है और फिर खुली और पॉलिश किया जाता है। इस उपचार के दौरान, चावल की त्वचा में निहित विटामिन और खनिजों का लगभग 80 प्रतिशत हिस्सा चावलकार्न के इंटीरियर में दबाया जाता है जिससे कि चावल को भूसी सफेद चावल की तुलना में अधिक पौष्टिक रूप से मूल्यवान पौष्टिक रूप से मूल्यवान किया जाता है। पूर्ण अनाज चावल की तुलना में, इसमें कम खाना पकाने का समय है बढ़े हुए विटामिन और खनिज पदार्थों के अलावा, चावल की चावल ने बनावट गुणों में सुधार किया है और पॉलिश चावल की तुलना में बेहतर जिलेटिनेशन क्षमता में वृद्धि हुई है। सुगंधित स्वाद की सामग्री की वजह से उबला हुआ बटुआ चावल थोड़ा मजबूत स्वाद है। दुनिया के चावल के उत्पादन का पांचवां हिस्सा संसाधित चावल में संसाधित होता है। बहसाने की प्रक्रिया के दौरान, चावल के अनाज की सतह एक साथ स्टार्च द्वारा जिलेटिनीकृत होती है जिसमें उसमें निहित होता है।

Parboiling ist ein industrielles Verfahren der Reisbehandlung, bei dem der so genannte Parboiled-Reis hergestellt wird. Dabei wird Rohreis in mehreren Schritten zunächst eingeweicht, dann mit heißem Dampf behandelt, anschließend getrocknet und erst danach geschält und poliert. Während dieser Behandlung werden etwa 80 Prozent der im Silberhäutchen enthaltenen Vitamine und Mineralstoffe in das Innere des Reiskorns gepresst, so dass Parboiled-Reis ernährungsphysiologisch wertvoller ist als geschälter weißer Reis. Gegenüber Vollkornreis hat er eine kürzere Garzeit. Neben der erhöhten Vitamin- und Mineralstoffgehalten hat parboiled-Reis gegenüber poliertem Reis bessere Struktureigenschaften und eine verbesserte Verkleisterungsfähigkeit. Gekochter Parboiled-Reis hat einen etwas kräftigeren Geschmack durch seinen Gehalt an Aromavorläufern. Etwa ein Fünftel der Weltproduktion an Reis wird zu Parboiled-Reis verarbeitet. Während des Parboiling-Verfahrens wird gleichzeitig die Oberfläche der Reiskörner durch die enthaltene Stärke verkleistert.
