Queste alghe sono note come agarofiti e appartengono al Phophum di Rhodophyta. L'agar è in realtà la miscela risultante di due componenti: l'agarosio lineare polisaccaride e una miscela eterogenea di molecole più piccole chiamate agaropectina. Durante la storia nei tempi moderni, l'agar è stato utilizzato principalmente come ingrediente nei dessert in tutta l'Asia e anche come substrato solido per contenere i mezzi di coltura per il lavoro microbiologico. Agar può essere usato come lassativo, sostitutivo dell'appetito, sostituto della gelatina vegetariana, addensante per zuppe, conservate di frutta, gelati e altri dessert, come agente di chiarificazione in birra e per il dimensionamento di carta e tessuti.
