Il naso elettronico è un dispositivo destinato a individuare odori o sapori. Negli ultimi dieci anni le tecnologie "sensore elettronico" o "e-sensing" hanno subito importanti sviluppi dal punto di vista tecnico e commerciale. L'espressione "sensing elettronico" si riferisce alla capacità di riprodurre i sensi umani utilizzando matrici di sensori e sistemi di riconoscimento dei pattern. Dal 1982, sono state condotte ricerche per sviluppare tecnologie, comunemente denominate naso elettronico, che potrebbero rilevare e riconoscere odori e sapori. Le fasi del processo di riconoscimento sono simili a quelle dell'umano umano e vengono eseguite per l'identificazione, il confronto, la quantificazione e altre applicazioni, incluso l'archiviazione e il recupero di dati. Tuttavia, la valutazione edonica è una specifica del naso umano, dato che è legata a opinioni soggettive. Questi dispositivi hanno subito molto sviluppo e sono ora utilizzati per soddisfare le esigenze industriali.
