Mezcal
Mezcal, o mescal, è una bevanda alcolica distillata fatta dalla pianta maguey originaria del Messico. La parola mezcal proviene da Nahuatl mexcalli metl e ixcalli che significa "agave cotta al forno". La maguey cresce in molte parti del Messico, anche se la maggior parte dei mezcal è fatta a Oaxaca. C'è un detto attribuito ad Oaxaca per quanto riguarda la bevanda: "para todo mal, mezcal, y para todo bien también". Non è chiaro se le bevande distillate siano state prodotte in Messico prima della conquista spagnola. Gli spagnoli sono stati introdotti a bevande fermentate autoctone come il pulque, anche fatto dalla pianta maguey. Presto i conquistatori cominciarono a sperimentare la pianta maguey per trovare un modo per fare un distillato fermentato. Il risultato è stato mezcal. Oggi, il mezcal è ancora fatto dal cuore della pianta maguey, chiamata "piña", molto simile a 200 anni fa, in molti luoghi. In Messico, il mezcal è generalmente consumato dritto e ha un forte sapore fumoso. Anche se il mezcal non è così popolare come la tequila, il Messico esporta il prodotto, soprattutto nel Giappone e negli Stati Uniti, e le esportazioni sono in crescita.
