Pszenica durum lub pszenica makaronowa jest jedynym gatunkiem pułapkowym pszenicy o znaczeniu handlowym, dziś szeroko uprawianym. Został opracowany przez sztuczny wybór udomowionych szczepów pszenicy emmerów, poprzednio uprawianych w Europie Środkowej i na Bliskim Wschodzie około roku 7000 pne, które rozwijały nagą, wolną od omłotu formę. Jednakże, jest to niezwykłe, że pomimo bardzo wysokiej zawartości białka, jest mało pożądanego glutenu potrzebnego do utworzenia lepkiej wstęgi niezbędnej do podniesienia chleba. W rezultacie, chociaż 100% pieczywa pszenicy durum istnieją, takie jak pagnotte di Enna lub chleb "rimacinato" z Sycylii, a także inne, w większości przypadków ciasta chlebowe zawierają tylko część pszenicy durum i są w znacznym stopniu uzupełnione komercyjnymi białymi mąki, często te o wyższej zawartości glutenu w celu zrównoważenia słabego udziału glutenu w mąkach durum.
